Waste not, want no, eh? That's why the broccoli pesto left over from pasta got a new life in potato salad. Which is good as is. Or as a side for grilled meat. Especially with a proper, meaty sausage. Accompanied with beer. Perfect for Octoberfest then!
This is another post forgotten in the drafts, which is why the potatos used in this one were the eagerly anticipated new potatos. But feel to use any old potatos you want. On the small side though.
This makes a generous portion for 2 or a more moderate one for 3
10 (new) potatos
200 g green beans
1 onion
Steam or boil the potatos until done. Trim the beans and do the same. Cut the onion into thin slices and fry quickly in a pan in a little bit of oil to soften the flavour and texture. Combine the ingredients and toss together with the pesto.
