I was recommended this recipe by the people at Moroccan stand at the Travel Expo last week and I couldn't wait to try it as this vibrant salad combines two of my favourite ingredients right now: orange and pomegranate. Both are packed with vitamin C which is something I can't get enough of at this time of the year!
This salad is quick, easy and only takes a handful of ingredients. Yet somehow it all just comes together in a way that is insanely good and oh, so fresh!

Pomegranates have been cultivated and consumed around Mediterranean for thousands of years, so as far as super foods go, they don't get much more old school than this. In Greek mythology Hades, the ruler of the Underworld offered these to Persephone, was was condemned to spend part of her year there and subsequently made her infertile. So the story goes that in ancient Greece this was used as contraceptive (and for terminating pregnancies!) For that kind of issues I strongly recommend you seek advice somewhere outside this blog (preferably medical!) but for antioxidants this is your go-to-guy.
In any case you'd be hard to push to find a fruit this fruitful: on average each pomegranate has over 600 seeds!

Serves 4
4 oranges
1 pomegranate
2,5 dl pistachios (unsalted), roughly chopped
2,5 dl Greek yogurt
honey
1 tsp cinnamon
Cut the ends of the oranges so they stand up. By running you knife from the top towards the bottom remove the peel all the way to the flesh (removing the white pith as well). Cut into slices and place in the serving bowl. Scatter pomegranate seeds on top of them. Spoon yogurt on top, drizzle with honey and top with pistachios. Sprinkle cinnamon on top of the salad and serve. With that chai ma na na for instance!
