Soup Sunday: spinach soup

Especially in Finnish foods certain things just go together. For reasons no-one even remembers anymore. Why is Thursday a pea soup day? And why is it always followed by pancakes? Why is Carelian pie at its best egg butter? Spinach soup is a similar mystery - why is it always served with hard-boiled egg?

Spinach is a brilliant ingredient though: full of iron and stuff. Though it's not quite as superpower-restoring as Popeye would lead you to think...

Spinach is also rather exciting (a euphemism we all recognize from the dating world, usually referring to "identity issues bordering on mental illness") in that in order to iron it also contains hefty quantity of oxal acid which interferes with body's ability to absorb iron. It also binds calcium which is why spinach recipes often have dairy products in them. Like my spinach and ricotta raviolis. And this soup. 

Feeds 4

50 g butter
4 fairly generous tbsp of all purpose flour
1 l milk
1/2 tsp nutmeg
salt
150 g bag frozen spinach

hard-boiled eggs to serve

Melt the butter in a pan. Add to it flour and let cook for 5 minutes or so. Then add hot milk, continuously stirring. Once it's smooth, add nutmeg and spinach. Continue cooking for another 5 minutes and season.
